Going Gluten Free and really wish you could eat tortillas?
NOW YOU CAN!
Paleo Tortillas are Your Answer.
I absolutely LOVE my breads, but truly rarely eat them.
At one time, I would blow up like a balloon, have excessive mucous forming in my body, have common joint pain, and get sideways with my mental mind-set if I ate gluten, or any grain for that matter. No Longer!
Now that I have healed my gut I can actually eat these foods without any real trouble.
Yet I find that I am more focused and vibrant in my life when I eat less of those things, so I am now on an endless search for recipes that are healthy an fulfill my bread needs... and I have found one!
If you think you may have Digestive issues
I truly wish I know who's recipe this is, as they deserve a huge hug for allowing this kind of creativity in the kitchen!

Even if you are on the Continuation Prorgam you can eat these little babies!
*Makes 3 tortillas.
It is said they are freezable, but I have not tried that yet.
If you do let me know how it goes:
1 tbsp. water
1 tsp coconut oil (or ghee), melted
1/4 cup arrowroot powder
1 tsp coconut flour
pinch sea salt
whip eggs, water and melted count oil together really well.
Add dry ingredients.
Whip until batter is smooth.
pour 1/3 of batter into warm 8-inch skillet on medium heat.
Let cook about 1 minute on each side.
You will easily be able to flip them when the edges begin to pull away from the edges of the pan.
TIP: don't use too much batter ~ The thinner the better.
