Acorn Squash Delight is a perfectly Paleo-Friendly, Sugar-Free, Low-Fat recipe for the Holidays! It is a tasty dish that is approved for the 10-Day Athlete's Transformation Program. I actually used this as my side dish AND Dessert! (yep, you got it, I was cleansing through the holiday...)
Have you ever tried that?!? Me Neither... It was my first time cleansing through a holiday, but I have to say it was quite easy! L.O.V.E. (Live Organic Vegan Energy) and this recipe made the day. Heck, L.O.V.E. makes EVERY DAY great!

Acorn Squash Delight ingredients:
1 medium acorn squash
1 1/2 cup diced apples (I like Gala Apples)
1/3 cup unsweetened almond milk
2 tbsp. coconut butter, broken up into small granules
1 tsp. cinnamon
1/2 tsp. pumpkin pie spice
1/2 tsp. vanilla extract
stevia extract to taste (I used a dropper full)
Pre-heat oven to 400 degrees.
Cut squash in half, spoon out seeds, and slice off the bottom so that the squash sits upright.
In a mixing bowl, mix together all other ingredients until apples are coated well. The coconut butter should be room temperature which would make it a solid. Be sure that it is broken up into small crumbles.
Once everything is mixed together, spoon mixture into acorn squash bowls. I like to heap it up so there is plenty apple mixture to eat with the squash.
When the bowls are filled to your satisfaction, place both halves of the acorn squash in a small baking dish and bake for 30-40 minutes. The squash will become kind of soft when it is ready.
You are almost there...
Upon removing the Acorn Squash Delight from the oven, you will want to let it set for a few minutes before serving. This lets all the flavors meld together and create a delicious experience. Place each bowl on a serving plate and eat right out of the skin!
